01 - Combine warm water, active dry yeast, and granulated sugar in a large mixing bowl. Let stand for 5 minutes until the mixture becomes foamy.
02 - Add all-purpose flour, salt, and melted butter to the yeast mixture. Mix using a wooden spoon or stand mixer with dough hook on low speed until a soft dough forms. Knead by hand or in the mixer for 5 to 7 minutes until smooth and elastic.
03 - Transfer the dough to a lightly oiled bowl. Cover and let rise in a warm spot for 45 to 60 minutes or until doubled in volume.
04 - Preheat oven to 425°F. Line two baking sheets with parchment paper.
05 - In a large pot, bring 10 cups water and baking soda to a rolling boil.
06 - Punch down the risen dough. Divide into 6 equal portions, then roll each into a 14-inch rope. Cut each rope into 1-inch pieces to form bite-sized portions.
07 - Working in batches, place pretzel pieces into the boiling baking soda solution for 30 seconds. Remove with a slotted spoon and arrange evenly onto the prepared baking sheets.
08 - Brush each bite with a beaten egg wash and sprinkle with coarse sea salt.
09 - Bake in the preheated oven for 12 to 15 minutes, or until the pretzel bites are deeply golden brown.
10 - Allow to cool slightly on baking sheets before serving warm.
