# Expert Suggestions:

01 -
  • It comes together in one pan so cleanup is almost nothing
  • The sauce that forms at the bottom is the kind you want to spoon over everything
  • It tastes like something from a seaside taverna but uses ingredients from a regular grocery store
02 -
  • Overcooked shrimp become rubbery and no amount of sauce can fix that so pull them the moment they curl into a C shape
  • Crowding the pan drops the temperature and steams the shrimp instead of searing them so cook in two batches if needed
03 -
  • Patting shrimp dry with paper towels is the single most important step for getting a good sear
  • Letting the tomato mixture cook undisturbed for 30 seconds at a time helps the fond develop on the bottom of the pan
