01 - Bring a large pot of salted water to a boil. Add trimmed green beans and cook for 3-4 minutes until bright green and just tender.
02 - Drain beans and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and pat dry with paper towels.
03 - In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
04 - Add blanched green beans, lemon zest, salt, and pepper to the skillet. Toss and cook for 2-3 minutes until heated through.
05 - Remove from heat and toss with fresh lemon juice. Adjust seasoning to taste.
06 - Transfer to a serving platter. Top with chopped parsley and toasted almonds if desired.
