# How to Prepare:

01 - Toss the sliced chicken breast with cornstarch, salt, and black pepper in a bowl until evenly coated.
02 - Whisk together soy sauce, oyster sauce, rice vinegar, honey, sesame oil, garlic, ginger, and red pepper flakes in a small bowl; set aside.
03 - Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add the chicken and stir fry for 4–5 minutes until cooked through. Remove chicken to a plate and set aside.

05 - Add zucchini noodles and green onions to the pan; stir fry for 2 minutes until zucchini is just softened.

# Expert Suggestions:

01 -
  • Everything cooks in one pan, meaning less cleanup and more time to actually eat dinner
  • The cornstarch coated chicken stays incredibly tender, a technique I learned from failing with dry rubbery chicken countless times
02 -
  • Zucchini noodles release water as they cook, so keeping the cooking time short prevents a watery sauce and soggy texture
  • Have all ingredients prepped and the sauce mixed before you start cooking because stir fries happen fast and there is no time to measure once the heat is on
03 -
  • Pat the zucchini noodles dry with paper towels before cooking if they seem especially wet, this one step prevents watery stir fry
  • Let your pan get properly hot before adding ingredients, that sizzle sound means perfectly crisp vegetables not steamed ones
