# How to Prepare:

01 - Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
02 - Heat butter and olive oil in a large skillet over medium-high heat. Add chopped shallot and sauté for 2 minutes until softened.
03 - Stir in minced garlic and cook for 30 seconds until aromatic.
04 - Add sliced mushrooms and cook, stirring occasionally, until golden and all liquid has evaporated, about 7 to 8 minutes.
05 - Pour in white wine (if using) and simmer for 2 minutes until mostly reduced.
06 - Reduce heat to medium-low. Stir in heavy cream and nutmeg. Simmer gently for 2 to 3 minutes until slightly thickened.
07 - Add Parmesan cheese and stir until melted and smooth. Season with salt and freshly ground black pepper.
08 - Add drained pasta to the sauce, adding reserved pasta water gradually to achieve desired creaminess.
09 - Remove skillet from heat. Stir in chopped parsley.
10 - Serve immediately, garnished with extra Parmesan cheese and more parsley if desired.
