→ Slider Assembly

18 - 8 slider buns
19 - 1 cup arugula or baby spinach
20 - 1 small red onion, thinly sliced
21 - 1-2 tbsp olive oil for toasting buns

# How to Prepare:

01 - Rub steak thoroughly with olive oil, kosher salt, and black pepper. Allow to rest at room temperature for 15 minutes to reach even temperature.
02 - Combine softened butter, minced garlic, lemon juice, lemon zest, Dijon mustard, Worcestershire sauce, smoked paprika, cayenne pepper, parsley, chives, dill, red pepper flakes, and salt in mixing bowl. Mix until completely smooth and uniform. Set aside at room temperature.
03 - Heat grill pan or heavy skillet over high heat until smoking hot. Sear steak for 3-4 minutes per side for medium-rare, adjusting time for desired doneness. Remove from heat and rest for 5 minutes. Slice thinly against the grain.
04 - Brush slider buns lightly with olive oil. Place in hot skillet cut-side down and toast until golden brown and crispy, about 1-2 minutes.
05 - Spread generous layer of cowboy butter on both cut sides of each bun. Layer bottom buns with arugula, sliced steak, and red onion rings. Crown with bun tops.
06 - Serve immediately while warm. Extra cowboy butter can be passed alongside for additional flavor.
